Sarirasa Boemboe Babi Pangang: Sweet and Sour Indonesian Pork
Ingredients
• 500 grams pork belly or shoulder (cut into strips or chunks)
• 1 pack Sarirasa Boemboe Babi Pangang
• 2 tablespoons rice oil
• 3 tablespoons sweet soy sauce (Kecap Manis)
• 1 tablespoon vinegar
• 250 ml water
Instructions
1. Prepare the pork
Heat 2 tablespoons of rice oil in a pan and sear the pork until golden brown. Remove and set aside.
2. Sauté the spice mix
In the same pan, sauté the Sarirasa Boemboe Babi Pangang until aromatic.
3. Combine ingredients
Add the seared pork back to the pan. Stir in 3 tablespoons of sweet soy sauce, 1 tablespoon of vinegar, and 250 ml of water. Mix thoroughly.
4. Simmer
Reduce the heat and let the dish simmer for 20–30 minutes, or until the pork is tender and the sauce has thickened to a glossy consistency.
5. Optional Grilling
For a charred finish, transfer the cooked pork to a grill or oven and roast briefly until slightly crispy, brushing with extra sauce if desired.
Serving Tip
Serve Babi Pangang with steamed rice, sambal, and sides like Sambal Goreng, Sajoer Lodeh, or Atjar Tjampoer. For a full rijsttafel experience, pair it with other Sarirasa dishes like Rendang or Nasi Goreng.
